Femur bone is also known as "pig's hind leg bone" or "cylinder bone" in China. It consists of two bones. The bone of the lower part is connected to the pig's hind elbow, known as "pork stick bone"; the bone of the upper part is deeply embedded in the pig's hind leg meat, known as the "pork big bone." Among them, "pork's stick bone" is suitable for preparing soup. "Pork big bone", on the other hand, is suitable for making sauce bones or stewing.
